Chicken Balls two ways: Oven Baked vs Pan Fried





SERVES 4 / 16 burgers | PREPARATION TIME 20min | COOKING TIME 30min


Ingredients

  • 500 grams minced chicken

  • 70 grams grated butternut

  • 70 grams grated carrots

  • 1/2 medium grated onion

  • 1 egg

  • 1 tbsp ketchup

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp curcuma

  • 1/3 cup breadcrumbs

PS: 1 tbsp Teryaki sauce to drizzle after they come out the oven


For the Pan fried version

  • Panko breadcrumbs ( Japanese version breadcrumbs - you can use regular too)




Oven Baked Recipe

  1. Preheat oven to 180 degrees

  2. Mix all ingredients together in a bowl

  3. Using an ice cream scoop, make even sized burgers

  4. Grease you hands with some vegetable oil to flatten and shape your burgers

  5. Place burgers on a baking tray (covered with baking paper)

  6. Bake them in the oven for 20 -25 min

  7. Once baked, remove from oven and serve immediately

  8. Optional: drizzle with some teriyaki sauce


Pan fried version with a peanut butter sauce


Recipe Pan fried

  1. Preheat oven to 180 degrees

  2. Mix all ingredients together in a bowl

  3. Using an ice cream scoop, make even sized burgers

  4. Grease you hands with some vegetable oil to flatten and shape your burgers

  5. Roll each burger in Panko breadcrumbs

  6. Heat a frying pan with vegetable oil

  7. Fry burgers on each side till golden

  8. Remove from pan and place on paper towel to remove excess oil

  9. Transfer the burgers onto a tray with a parchment paper and bake those babies for 15 min in your preheated oven

  10. Serve them with the Peanut butter sauce or plain


Peanut butter dip

  • 3/4 cup coconut milk (1/2 can)

  • 1 Tbsp red curry paste

  • 1/3 cup natural peanut butter

  • 1 Tsp soy sauce

  • 1 Tbsp rice vinegar

  • 2 Tbsp brown sugar

  • 1/4 cup water

Instructions:

  1. Combine all ingredients except the water

  2. Dissolve the sugar

  3. Add more red curry paste if you prefer more spicy

  4. Thin the sauce with water to the consistency


Creative alternatives:


1. Alternatives to minced chicken:

  • Deboned chicken thighs

  • Beef mince

  • Turkey mince

Tip : The mince should always be a bit greasy & fresh (If you defrost your meat, it will need to be drained from excess liquid and will need more breadcrumbs)


2. Alternatives to breadcrumbs:

  • Quick instant oats

  • Challa bread / or any other gluten free bread ( just pulse it in a blender to make your own crumbs)

  • Baked Sweet potatoes / potatoes

  • Cooked rice

3. Alternatives to Grated butternut & Carrots:

  • Grated zucchini

  • grated sweet potatoes

Just use what you fancy can be grated or Cooked veggies .
