INGREDIENTS:
Marinade the cod:
400 grams Cod diced in small cubes
3 lemon juice
3 lime juice
olive oil
2 tbsp Chopped coriander
1 garlic clove, crushed
Remaining ingredients:
1 shallot chopped very finely
1 jalapeño finely chopped
1 avocado diced ( swap to pomegranate seeds / mango )
2 tablespoons soya sauce
1 tsp chopped mint for garnish ( coriander / chervil )
1 teaspoon sesame oil
INSTRUCTIONS
Cut the fish in small cubes size for a bite.
Marinate and refrigerate the cod in juice of 3 lemons and 3 limes together with the chopped coriander and crushed garlic for at least 4 hours .
Stir occasionally throughout the day to make sure all the pieces are fully exposed to the lime juice.
Prepare the remaining ingredients
When ready to serve , strain the fish from the seafood leave just 3 tablespoons .Mix all remaining ingredients together and combine with marinated cod just before serving
