Ceviche cod with Avocado




Number of servings: 4

Preparation time: 20 min (+marinating)


INGREDIENTS:


Marinade the cod:

  • 400 grams Cod diced in small cubes

  • 3 lemon juice

  • 3 lime juice

  • olive oil

  • 2 tbsp Chopped coriander

  • 1 garlic clove, crushed

Remaining ingredients:

  • 1 shallot chopped very finely

  • 1 jalapeño finely chopped

  • 1 avocado diced ( swap to pomegranate seeds / mango )

  • 2 tablespoons soya sauce

  • 1 tsp chopped mint for garnish ( coriander / chervil )

  • 1 teaspoon sesame oil


INSTRUCTIONS

  1. Cut the fish in small cubes size for a bite.

  2. Marinate and refrigerate the cod in juice of 3 lemons and 3 limes together with the chopped coriander and crushed garlic for at least 4 hours .

  3. Stir occasionally throughout the day to make sure all the pieces are fully exposed to the lime juice.

  4. Prepare the remaining ingredients

  5. When ready to serve , strain the fish from the seafood leave just 3 tablespoons .Mix all remaining ingredients together and combine with marinated cod just before serving
