Asian Steamed Seabass





SERVES 2 | PREPARATION TIME 20min | COOKING TIME 15min add marination time 20 min


Ingredients:


  • 4 Sea bass Filets without the skin (Approx. 90 grams each filet)

For the Marinade:

  • 1 tbsp Sake

  • 1 tbsp Mirin

  • 1 tbsp Dashi

  • 1 tbsp Ponzu sauce

For Flavouring the water & Garnish:

  • Ginger slices

  • spring onions

  • lemongrass

  • lime leaves

For the Lime dressing:

  • 1 tsp grated ginger

  • 4 tbsp lime juice

  • 1 tbsp sugar

  • 1 lemongrass stalk

  • 2 tbsp Ponzu Sauce

Instructions:

  1. Combine all marinade ingredients, rub thoroughly into the fish

  2. Set aside to marinade for 15-25 min .

  3. For the lime dressing: Combine all ingredients and bring to the boil. Once boiled, remove from heat immediately and set aside.

Steaming the fish:


There are three ways to steam your fish:

1. A metal colander

2. A steam basket, placed on top of a pan

3. Make your own by placing a glass bowl inside a pot with water (Bain-marie) and cover with a lid.

  • In your steam basket: Place parchment paper or a salad leaf, then the marinated fish on top with a sprinkle of spring onions and ginger slices.

  • Place the steam basket on a pot of boiling water with some lime leaves , lemongrass and slices of ginger. (It will give an extra taste while steaming . ( instead of water you can use some beer , the outcome is magnificent TRY )

Steam the fish for 15 min ( it all depends on the weight of you fish between 90 -100 grams 15 min must be more than enough , to check you take a toothpick and stick in on the most thick part of the fish.


Serve with the lime dressing and a salad or plain rice ,
