Nat's Winter Soup





SERVES 4 | PREPARATION TIME 20min | COOKING TIME 50min


Ingredients


For the Soup

  • 1 onion

  • 3 carrots diced ( 125 grams )

  • 1/2 zucchini (125 grams)

  • 1/4 sweet potato (80 grams)

  • green beans 50 grams

  • celery with some leafs 50 grams

  • Mix of 3 lentils (green , yellow , pink) 25 grams

  • 1/2 lemon juice & zest

  • 2 tsp tomato purée

  • handfull cilantro

  • 1 liter and a half water ( add more after 40 Min if desired)

  • 1 Tbls Morga ( vegetable stock) or chicken stock

salt & pepper , ½ tsp curcuma , 1tsp sweet paprika , 1 tbls soup spices

Soup spices ( mix of cumin , turmeric , coriander, black pepper , cardamon cloves)


For the Dumplings

  • 125 fine semolina (BE/ you can buy it in Colruyt by the flour section )

  • 1/2 cup boiling water

  • 1/2 tbls olive oil

  • Salt , pepper , pinch of turmeric / sweet paprika

Semolina fine = Blé dur de qualité supérieure

That's the one we use for making Pasta dough (not the Flour 00)

Recipe

  1. Take a bowl add the semolina with the boiling water(in the cup you add the rest of the ingredients )mix it well. Wrap it with a clingfilm and let it rest for at least 30 min .

  2. In the meanwhile , cut all your veggies in small dices not too small (or as you desire )

  3. The idea of this Soup is too cook the dumpling a point and it takes about 50 min But leave the vegetable a bit crunchy.

  4. Once you have let the dough rest , u use a 1/4 tsp measure spoon to make small balls , set them on a board .

  5. Take a medium size pot , 1 tbls olive oil in the pan start with the onions add the spices ,boiling water , the start to put your dumplings in the water , put the lid on (medium high) for 20 min.

  6. Add the carrots after 20 min then put the lid back on and wait more 15 min before adding the rest of the ingredients . After 50 min ( taste one dumpling ,cut in half and taste , if your dumpling are not even wait more 10 min )

  7. Before i serve i add a raw cherry tomato , some chilli and a bit more of Lemon juice and some more cilantro leaves.




TIPS: As you know , carrots need 40 cooking time(it depends of the size) ,the rest of the veggies need 15 min to 20 min to stay crunchy. The package that i bought Mix trio lentils as per instruction cooking time is 15 min as well.( so check yours ,sometime you need to soak them before Eat , so read the instruction)

So stay logical with the cooking time of your veggies if you wanted them to be crunchy .So add them accordingly ( don't forget , you usually heat it up before eating)
